Chris Kimball's chocolate mousse.

Melt over low heat, stirring with a whisk:

3/4 C milk

1 tsp. instant coffee crystals

2 oz. bitter chocolate

1 oz. unsweetened chocolate

 

When all is melted, cool in ice bath about 10 minutes

Separately, whip 3/4 C heavy cream and 1 tsp. vanilla

Fold together with cooled chocolate mixture. Place in glasses. Refrigerate a couple of hours.

COMMENTS. Very chocolately but not sweet.
